Pink Grapefruit Muffins
Description
This recipe starts by creaming room-temperature butter and sugar until pale and fluffy, then beating in egg yolks, fresh pink grapefruit juice and zest, and vanilla extract. Flour, baking powder, baking soda, and salt are gradually folded in, with buttermilk added between flour additions to produce a moist batter. Separated egg whites are beaten to soft peaks and gently folded into the batter to add lightness.
The batter is spooned into a muffin tin and topped with grapefruit zest and sugar combined as a crunchy topping. Baking at 350°F creates muffins with tender crumb and a slightly crisp sugary top. The citrus zest topping reinforces the grapefruit flavor and adds subtle texture contrast.
These muffins offer a balance of bright, slightly tart grapefruit flavor with the richness of butter and buttermilk, yielding a fresh, flavorful baked good suitable for breakfast or snack times.
Ingredients
- 1/2 cup butter , at room temperature
- 1 cup sugar
- 2 egg separated, large
- 3/4 cup buttermilk
- pink grapefruit about 1 1/2 tablespoons, zest of one
- 1/2 cup pink grapefruit juice freshly squeezed
- 1 teaspoon vanilla extract quality pure
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- For the Grapefruit Sugar Topping:
- 2 teaspoons pink grapefruit zest
- 1/4 cup sugar
Instructions
- Preheat the oven to 350 F. Grease a 12-cup muffin pan unless using non-stick. Cream the butter and sugar in a large bowl for several minutes until light pale and fluffy. Add the egg yolks and beat until combined. Add the grapefruit juice, zest, and vanilla extract and beat until combined. In a separate bowl, combine the flour, baking powder, baking soda and salt. A bit at a time, carefully fold the flour mixture into the batter using a rubber spatula. Add the buttermilk between flour additions. Some lumps are fine. Be careful not to over-stir.
- Beat the egg whites until soft peaks form. Using a rubber spatula, carefully fold the egg whites into the batter, again being careful not to over-stir. Spoon the batter into the muffin tins about 3/4 full.
- To make the grapefruit sugar, use your fingers to combine the grapefruit zest with the sugar in a small bowl. Sprinkle the grapefruit sugar on top of the muffins.Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins sit for 5 minutes, then transfer them to a wire rack.
