Pizza Bombs

Pizza Bombs are bite-sized stuffed biscuit pockets filled with pizza sauce, pepperoni, and mozzarella, baked until golden brown, then topped with garlic butter made from melted butter, garlic salt, Italian seasoning, and Parmesan. They offer a soft, flaky exterior with a savory, cheesy filling and a flavorful buttery top, ideal for appetizers or snacks.

Description

Pizza Bombs are prepared by flattening canned buttermilk biscuits and filling each with pizza sauce, mini pepperoni slices, and small cubes of mozzarella cheese. The biscuit edges are sealed tightly to enclose the filling, then arranged seam-side down in a greased oven-safe skillet and baked at 375°F until golden and cooked through. After baking, a garlic butter sauce made with melted butter, garlic salt, Italian seasoning, and grated Parmesan cheese is brushed on top, adding rich flavor and moisture.

The biscuits bake to a crisp golden color with a soft interior containing melted cheese and spicy pepperoni. The garlic butter topping enhances the overall savoriness and adds a buttery, herby finish. Serving with extra pizza sauce for dipping complements the flavors and provides moisture.

Pizza Bombs work well as finger food for gatherings or as a quick snack. The recipe is versatile and can be cooked in the oven or an air fryer depending on the equipment, maintaining their crispness and cheesy filling.

When using the air fryer, cook in batches at 350°F for 11-12 minutes and brush with garlic butter before serving.

Ingredients

Servings

Pizza Bombs

  • 1 can buttermilk biscuits not flaky, 8-count; Southern homestyle
  • 1 cup pizza sauce divided, 257 g
  • ½ cup pepperoni divided, mini slices, 69 g
  • 4 ounces mozzarella cheese cut into 16 equal-sized cubes, divided

Garlic Butter

  • ¼ cup butter melted, unsalted; ½ stick / 57 g
  • ¼ teaspoon garlic salt
  • ¼ teaspoon Italian seasoning
  • 2 tablespoons Parmesan Cheese grated

Instructions

Pizza Bombs

  1. Preheat the oven to 375°F and spray a 12-inch, oven-safe skillet with nonstick spray. (You could also use a greased baking dish, but the cooking time may vary.)
  2. Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about ⅛-inch thickness.
  3. Top each biscuit with 1 tablespoon of pizza sauce, 1 tablespoon pepperoni slices, and 2 cubes of mozzarella cheese.
  4. Fold the edges of the biscuit together, pinching them tightly so there are no holes or gaps. Place the bomb seam side down into the prepared skillet. Repeat with the remaining bombs.
  5. Bake for 20-22 minutes, or until the biscuits are golden brown.

Garlic Butter

  1. In a small bowl, mix together the melted butter, garlic salt, Italian seasoning, and parmesan cheese.
  2. After removing the pizza bombs from the oven, brush the garlic butter mixture over the top.
  3. Serve with the remaining pizza sauce for dipping. Enjoy!

Notes

  • Ensure the biscuit edges are pinched tightly to prevent filling from leaking during baking.
  • Pizza Bombs can be cooked in an air fryer at 350°F for 11-12 minutes in a single layer, brushing with garlic butter after cooking.
  • Serve warm with extra pizza sauce for dipping to enhance the flavor and moisture.
