Pizza Lasagna

PIZZA LASAGNA is a new favorite weeknight meal for my entire family!! This recipe is so easy and can be made ahead for dinner on busy weeknights!

Ingredients

Servings

Sauce

  • 2 tbsp olive oil divided
  • 1 yellow onion chopped
  • 3 garlic cloves minced
  • Two 29 oz. cans tomato sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano dried
  • 2 tsp basil dried

Meat filling

  • 1.25 pounds Italian seasoned ground turkey
  • 8 oz. mushrooms chopped

Lasagna

  • 30 oz ricotta cheese
  • 2 eggs slightly beaten
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup chopped Italian parsley
  • 9 cooked lasagna noodles cooked
  • 6 oz. pepperoni
  • 4 cups mozzarella shredded

Instructions

  1. preheat oven to 350 degrees
  2. heat 1 tbsp olive oil in a large pot over medium heat
  3. add in onion and season with 1 tsp salt and 1 tsp pepper, allow to cook for 5 minutes
  4. add in garlic and cook for an additional minute
  5. pour in the tomato sauce and season with oregano and basil
  6. allow to simmer for 15 minutes

Meat filling

  1. heat 1 tbsp olive oil in a large skillet
  2. add in the ground turkey and break it up as it cooks
  3. once the turkey is cooked through remove it onto a plate until later
  4. add in the mushrooms and allow to cook until softened
  5. remove to the same plate that the meat is on

Lasagna prep

  1. combine the ricotta, eggs, salt, pepper and chopped Italian parsley in a mixing bowl
  2. in a 13 x 9 baking dish spread 1/4 cup of the tomato sauce around the bottom of a baking dish
  3. lay 3 lasagna noodles to cover the bottom of the baking dish
  4. spread a 1/3 of the ricotta mixture over the noodles in an even layer
  5. spread some of the tomato sauce over the ricotta and then top with a 1/3 of the mozzarella cheese
  6. next, layer a 1/3 of the meat/mushroom mixture and then a layer of pepperoni
  7. repeat with 3 more noodles and ricotta, mozzarella, tomato sauce, meat/mushrooms and pepperoni twice
  8. place in the oven and bake for 20 to 30 minutes until cheese is melted and bubbly
  9. enjoy!

Notes

  • You'll want a high-sided 9-inch x 13-inch lasagna baking dish for this recipe. If you use a standard 9x13 baking dish, you will be able to get a couple layers in the dish, but not all of them.
  • If this happens, you can take the remaining ingredients and make a little 9x9 inch baking dish lasagna to save for later or to take to a friend. :)
