This Porcini Salt combines dried porcini mushrooms ground to a powder with flaked sea salt (such as Maldon or fleur de sel) in a jar for storage. The porcini powder contributes an earthy, savory flavor that infuses the salt, creating a seasoning ideal for adding depth to meats, vegetables, or even popcorn. The salt is mixed carefully to retain some flakiness while incorporating the mushroom essence. It can be stored sealed in a cool, dry place and kept for a few months while maintaining its flavor.

Ingredients

  • 4 tablespoons sea salt I love Maldon salt, flaked
  • fleur de sel see blog post for a discussion about the differences in these two salts, or natural salt
  • 2 tablespoons dried porcini mushrooms pieces

Instructions

  1. Using a coffee/spice grinder grind the porcini mushrooms to a powder. Add 2 tablespoons of the flaked salt and pulse two or three times to break up the salt but not pulverize it. Transfer the mixture to a bowl and stir in the remaining 2 tablespoons of flaked salt. Store in an airtight jar in a cool place. Will keep for a few months.Makes approx. 1/4 cup of porcini salt.
