Prawn Cocktail!!!
Description
Prawn Cocktail!!! uses either whole or peeled medium prawns that are fresh and cooked or raw. The sauce combines creamy whole egg mayonnaise with ketchup, Worcestershire sauce, horseradish, Tabasco, and cayenne pepper to provide a balanced tangy and slightly spicy flavor. The prawns are mixed with this sauce and served atop finely sliced iceberg lettuce. This presentation gives a crisp contrast to the tender prawns.
The recipe's method involves peeling prawns if needed, mixing the sauce separately, and then tossing the prawns gently in the sauce. Serving in individual glasses or small bowls with lettuce adds a decorative aspect. Lemon wedges and chopped parsley can be added for brightness and color.

Ingredients
- 1 kg / 2 lb prawns yields ~600g once peeled); OR, medium, fresh, cooked or raw, with shell and heads on
- 600 g / 1.2 lb prawns fresh cooked, peeled
- iceberg lettuce about 3 cups, finely sliced
- lemon wedges
- parsley optional, finely chopped
Sauce
- 2/3 cup / 165 ml mayonnaise , preferably good quality whole egg mayonnaise (Note 2)
- 1 tbsp ketchup or Australian/UK tomato sauce (Note 3)
- 1 tsp Worcestershire sauce
- 1 tsp horseradish or sub 1 1/2 tsp jarred OR 3/4 tsp wasabi, freshly grated
- Tabasco sauce to taste, dash
- Pinch cayenne pepper to taste + tiny bit of colour
Instructions
- If you are using whole prawns, remove heads and peel them. Leave a few whole for decorative purposes, if you wish. I find that with medium size already cooked prawns, deveining is usually not necessary (it's hard to do + so small it's barely noticeably especially with sauce).
- Mix together Sauce in a small bowl.
- Toss prawns with Sauce.
- Place a bit of lettuce in serving dishes. I like to use Martini glasses, but you can use any small serving vessel, or even small lettuce cups.
- Top with prawns. Serve, garnished with lemon wedges and a sprinkle of parsley, if using.

- Use freshly peeled prawns for the best texture and juiciness.
