Pulled Pork Nachos

These pulled pork nachos are crispy, cheesy, and so flavorful! This quick and easy recipe is great as an appetizer or entertaining family and friends. Great way to use up leftover pulled pork. Everyone loves this recipe!

Ingredients

  • 8 ounces tortilla chips
  • 8 ounces shredded cheese
  • 2 cups pulled pork
  • cup BBQ sauce optional
  • ¼ cup salsa
  • fresh cilantro
  • Lime wedges

Instructions

  1. First, preheat your oven to 400 degrees Fahrenheit.
  2. Spread out the tortilla chips on a rimmed baking pan. Sprinkle half of the shredded cheese on top.
  3. Then, add the pulled pork. If desired, add BBQ sauce on top. Spread the remaining cheese on top.
  4. Bake for 5 to 7 minutes, until cheese has melted.
  5. Carefully remove the pan from the oven. Top with salsa, fresh cilantro, and a squeeze of lime juice.
  6. Finally, serve!

  • Any type of shredded cheese works well.  Mozzarella and Mexican blend are great options.
  • Add BBQ sauce on top of the pork for even more flavor!
  • Keep a close eye on the nachos as they cook.  All ovens vary slightly.
  • Feel free to use pork carnitas instead of pulled pork.
  • Store leftovers in the fridge for up to 2 days.
  • To reheat, add leftovers to a pan.  Bake at 350 degrees Fahrenheit for 3 to 4 minutes.
