Pumpkin Chocolate Chip Cookies are quick and easy soft pumpkin cookies made with warm spices, canned pumpkin and lots of chocolate chips.

Ingredients
- 1 cup unsalted butter , softened
- 3/4 cup brown sugar , packed
- 1/2 cup granulated sugar
- 1 large egg
- 3/4 cup canned pumpkin
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/8 teaspoon ginger
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Add butter, brown sugar and sugar to a stand mixer and cream on medium speed for 1-2 minutes until light and fluffy.
- Add in the egg, pumpkin and vanilla until smooth.
- Sift the flour, baking soda, cinnamon, salt, nutmeg and ginger together in a medium bowl.
- Add in the dry ingredients until just combined then fold in the chocolate chips.
- Using 1 tablespoon sized balls of cookie dough, place them on parchment paper lined cookie sheets and bake for 10-12 minutes.
