Pumpkin Coffee Cake Donuts
Description
The Pumpkin Coffee Cake Donuts begin by blending a spice cake mix with pumpkin puree, eggs, and melted butter to form a moist, flavorful batter. A separate streusel topping is prepared by mixing brown sugar, flour, cinnamon, nutmeg, and melted butter until crumbly. This streusel is sprinkled over the batter in the donut pan before baking at 350°F for about 10 minutes.
After baking and slight cooling, the donuts are removed from the pan and topped with a glaze made from powdered sugar, milk, and vanilla extract that adds a sweet finishing touch. The donuts combine the moist texture of pumpkin cake with a crunchy streusel topping and a smooth glaze, delivering varied textures and flavors in each bite.
These donuts can be enjoyed fresh for breakfast, a dessert, or a festive treat during pumpkin season. The use of spice cake mix and pumpkin puree simplifies the preparation while maintaining a homestyle taste. The glaze adds a bright note that complements the warm spices throughout the donuts.
Ingredients
- 1 box spice cake mix
- 1 cup pumpkin puree
- 2 egg
- 3 tablespoon butter melted
- 1/2 cup brown sugar
- 1/2 cup flour *all purpose

- Fill the doughnut pan with the pumpkin batter about 2/3 full.
- Sprinkle the streusel mixture on top of the pumpkin batter.
- Bake in the preheated oven for about 10 minutes.
- Remove from oven and allow to cool for about 5 minutes prior to removing from the pan.

- Drizzle glaze on top of the donuts. Enjoy!
Notes
- Grease the donut pan well to ensure easy removal of the donuts after baking.
