Description

Pumpkin Eclair Cake assembles quickly by mixing instant French vanilla pudding with milk, canned pumpkin puree, half the whipped topping, and pumpkin pie spice into a smooth filling. The base layer of cinnamon graham cracker squares is arranged in a pan, topped with half of the pumpkin pudding mixture.

A second layer of graham crackers is followed by the remaining pumpkin pudding mixture, then another graham cracker layer. The remaining whipped topping is spread evenly over the top. As the cake chills for at least 4 hours, the pudding sets and the crackers soften to create a dessert with creamy texture combined with spiced graham cracker layers.

  • 2 instant French vanilla pudding mix 3.4-ounce packages
  • 2 ½ cups milk
  • 1 pumpkin puree 15-ounce can
  • 1 frozen whipped topping 8-ounce tub, thawed, divided
  • 1 teaspoon pumpkin pie spice
  • 1 graham cracker squares cinnamon, 14-ounce box

Instructions

  1. In a medium bowl, thoroughly mix the pudding mix, milk, pumpkin puree, half of the whipped topping, and the pumpkin pie spice.
  2. Arrange a single layer of graham cracker squares in the bottom of a 13×9 inch baking pan. 
  3. Evenly spread half of the pudding mixture over the crackers.Top with another layer of graham crackers and the remaining pudding mixture. Top with a final layer of graham crackers. Spread the remaining whipped topping over the final layer of graham crackers.
  4. Cover and chill for at least 4 hours. Before serving, lightly dust with cinnamon or pumpkin pie spice.
