Ingredients

  • 1 cup pumpkin puree pure
  • 2 egg large
  • ½ cup vegetable oil
  • cup water
  • 1 teaspoon vanilla extract pure
  • 1 ¼ cups sugar
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon kosher salt
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat oven to 350°F. Grease 18 muffin cups or line with paper baking cups.
  2. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, combine pumpkin, eggs, oil, water, vanilla and sugar until well blended.
  3. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until combined.
  4. Stir the dry ingredients into the pumpkin mixture until just blended. Divide the batter evenly between the prepared muffin cups.
  5. Bake in preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Notes

  • Try adding mix-ins such as mini chocolate chips, dried cranberries, chopped nuts, or sprinkling pumpkin seeds on top before baking.
