Pumpkin Scones With Yogurt

This pumpkin scones recipe with yogurt is quick and easy to prepare. This is one of my favorite scone recipes made with a combination of warm spices and the trick to making the pumpkin scones perfect is the yogurt. It’s the secret ingredient that makes the scones taste amazing.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon allspice powder
  • 1/4 teaspoon nutmeg powder
  • 1/2 teaspoon cinnamon powder
  • 1/4 cup vegetable shortening or butter
  • 1/4 cup light brown sugar
  • 1 cup pumpkin puree
  • 1/3 cup PLAIN yogurt
  • 1/4 cup milk topping optional

Instructions

  1. Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
  2. Combine flour, baking powder, baking soda, nutmeg, allspice, cinnamon, ginger, and salt in a bowl and whisk together.
  3. In a separate bowl beat the shortening and brown sugar followed by the yogurt and pumpkin puree.
  4. Gradually blend in the dry ingredients until the scone dough come together.
  5. Turn the dough out onto a floured working surface, sprinkle with flour, and knead gently just until smooth.
  6. Using a rolling pin, roll out the scone dough into a rectangle, approximately 12×6 inches.
  7. Using a sharp knife, cut into rectangles or squares and place 1″ apart on baking sheets.
  8. If you prefer you can roll the dough into a circle, about 3/4-inch thick, and cut it into wedges.
  9. Place the cut scones onto the lined baking sheet, and brush with some milk.
  10. Place into the oven and bake for 18-20 minutes.
  11. Transfer the pumpkin scones to wire racks and allow them to cool.
  12. Drizzle with some icing sugar and serve.
  13. Enjoy!
