Description

Pumpkin Spice Loaf incorporates all-purpose flour mixed with an array of warm spices including cinnamon, ginger, cloves, and nutmeg, combined with baking powder, baking soda, and salt for leavening and flavor. Softened butter and a blend of white and brown sugars provide sweetness and richness, while eggs and canned pumpkin puree add moisture and body. Chopped pecans and raisins folded into the batter contribute texture and bursts of flavor, with additional pecans and pumpkin seeds sprinkled on top for a crunchy finish.

The batter is baked in two loaf pans at 350°F for about one hour until a toothpick comes out clean. The result is a moist, spiced loaf with a soft crumb, complemented by the nuttiness of pecans and the slight chew of raisins. Pumpkin seeds add a mild crunch on top, enhancing texture contrast.

Serve slices as a breakfast treat, snack, or dessert. Its balance of spices and moist texture reflect classic pumpkin flavors. Cooling briefly before removing from pans prevents crumbling and helps retain shape.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1 ½ teaspoon ground ginger
  • 1 teaspoon cloves ground
  • 1 teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup butter softened
  • 1 ½ cups sugar
  • 1 cup brown sugar packed
  • 3 egg large
  • 15 oz pumpkin 1 can, puree
  • 1 ¼ cup pecans chopped
  • ¼ cup pumpkin seeds untoasted
  • ¼ cup raisins

Instructions

  1. Heat oven to 350°
  2. Coat two  9 x 5 loaf pans lightly with cooking spray
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, and salt.
  4. In another bowl, beat together butter, white sugar, and brown sugar until creamy. 
  5. Gradually beat eggs into butter & sugar mixture until combined.
  6. Add pumpkin puree to butter & sugar mixture, beating until combined.
  7. Add half the flour and spice mixture to the butter/sugar/egg/pumpkin mixture, folding in until just combined.  Add the remaining half of the dry ingredients, folding in as above. 
  8. Fold in 1 cup of the pecans and the raisins. 
  9. Spread the batter evenly in the two loaf pans, smoothing the tops
  10. Sprinkle remaining ¼ cup of pecans and pumpkin seeds over the tops of the loaves.
  11. Bake 1 hour, or until a toothpick inserted in the center of a loaf comes out clean.
  12. Remove from oven and transfer to wire rack. 
  13. Allow to cool 15 minutes before loosening sides of the loaves with a knife, then removing from pans
  14. Return to wire racks and allow to cool completely before slicing.
