Puto

Puto is a steamed Filipino rice cake made using rice flour, sugar, baking powder, and coconut milk. The batter, prepared ahead and chilled overnight, is portioned into molds and steamed until firm and cooked through. The result is a soft, slightly sweet, and moist cake that is delicate in texture, commonly enjoyed as a snack or alongside savory dishes.

Description

The recipe calls for a combination of rice flour, sugar, baking powder, and salt mixed together and blended with water and canned coconut milk, then refrigerated overnight to develop a smooth batter. The use of coconut milk lends mild creamy sweetness and moisture.

Batter is poured about three-quarters into individual puto molds that have been coated with non-stick spray or butter, then steamed over boiling water. A cloth cover over the steamer’s lid prevents condensation from dripping onto the cakes. Steaming for about 15 minutes results in tender, fluffy rice cakes that pass the toothpick test for doneness.

Puto is versatile as a snack or side to savory meals like Filipino stews and grilled dishes. It has a gentle sweetness balanced by a soft texture, making it widely enjoyed across ages.

  • 4 cups rice flour
  • 1 ½ cups sugar
  • 3 tablespoons baking powder
  • ½ teaspoon salt
  • 2 cups water
  • 1 can coconut milk 13.5 ounces
  • Non-stick cooking spray or melted butter

Instructions

  1. In a bowl, combine rice flour, sugar, baking powder, and salt. Whisk until distributed.
  2. Add water and coconut milk. Stir until smooth and well-blended. Cover with film and refrigerate overnight.
  3. Lightly spray insides of puto molds with non-stick cooking or lightly brush with melted butter. Pour puto batter into molds until ¾ full.
  4. In the bottom part of the steamer, add water and bring to a boil. Arrange filled puto molds in a single layer on the steamer basket. Place steamer basket over the bottom part. Wrap lid of the steamer with cheesecloth or any cotton material (to prevent condensation from dripping onto puto) and cover steamer. 
  5. Steam for about 15 minutes or until a toothpick inserted in center comes out clean.
  6.  Remove from the heat and allow to slightly cool and gently remove puto from the molds.
