  • 1 bread loaf Note 1, approx 30cm/12" long
  • 100 g / 1/2 cup butter unsalted
  • 1/2 tsp salt
  • 3 garlic minced (~ 3 tsp, cloves
  • 2 - 2.5 cups (200 - 250g) mozzarella cheese grated
  • parsley , for sprinkling (optional)

Instructions

  1. Preheat oven to 160C/320F.
  2. Mix butter with garlic and salt.
  3. Cut bread in half horizontally.
  4. Drizzle with garlic butter all over - don't miss any patches!
  5. Bake 20 minutes until bread is crispy on the edges.
  6. Crank oven up to 200C/390F. Top with cheese, bake 7 - 10 min until cheese is melted and bubbly.
  7. Sprinkle with parsley if using, cut bread into pieces. Serve immediately as a side for meals, dunking in soups and stews!
