Quick Cheesy Garlic Bread
Description
The base of this garlic bread is a soft, flatter bread like ciabatta or Vienna loaf, enhancing the buttery garlic flavor without overwhelming crispness. Butter mixed with minced garlic and salt is spread evenly over halved bread. The initial bake crisps the edges and warms the bread through.
After the first bake, mozzarella cheese is added on top, and the bread is returned to a higher temperature oven until the cheese melts and bubbles. A final sprinkle of parsley adds freshness and color. This preparation method offers a satisfying contrast of crispy edges and a moist, cheesy center.
Serve immediately alongside meals or as a dipper for soups and stews. The bread is best fresh but can be wrapped and reheated in the oven. Variations include adding pesto, herbs, or other antipasto spreads to customize flavor.
Ingredients
- 1 bread loaf Note 1, approx 30cm/12" long
- 100 g / 1/2 cup butter unsalted
- 1/2 tsp salt
- 3 garlic minced (~ 3 tsp, cloves
- 2 - 2.5 cups (200 - 250g) mozzarella cheese grated
- parsley , for sprinkling (optional)
Instructions
- Preheat oven to 160C/320F.
- Mix butter with garlic and salt.
- Cut bread in half horizontally.
- Drizzle with garlic butter all over - don't miss any patches!
- Bake 20 minutes until bread is crispy on the edges.
- Crank oven up to 200C/390F. Top with cheese, bake 7 - 10 min until cheese is melted and bubbly.
- Sprinkle with parsley if using, cut bread into pieces. Serve immediately as a side for meals, dunking in soups and stews!

- Choose softer bread types like ciabatta or Vienna loaf for an optimal balance between bread and butter.
- This recipe is flexible—try adding pesto, tapenades, or sprinkling parmesan for variations.
