  • 1/3 cup grated Pecorino Romano , or Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves , minced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons water

Instructions

  1. Combine all of the ingredients in a blender, and blend until smooth and creamy. Pour over chopped romaine, toss well, and garnish with additional cheese and a sprinkle of freshly ground black pepper, if desired.
