This quick dressing is a refreshing addition to any salad!

Ingredients
- 1/3 cup grated Pecorino Romano , or Parmesan cheese
- 2 tablespoons fresh lemon juice
- 2 garlic cloves , minced
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons water
Instructions
- Combine all of the ingredients in a blender, and blend until smooth and creamy. Pour over chopped romaine, toss well, and garnish with additional cheese and a sprinkle of freshly ground black pepper, if desired.
