Ingredients

  • 1 radish ends trimmed and sliced thinly, bunch
  • ½ cup white vinegar
  • ½ cup white sugar
  • ¼ cup water
  • 1 tsp salt
  • 1 tsp mustard seeds
  • 1 tsp black peppercorns
  • 1 bay leaf
  • Pinch crushed red pepper flakes

Instructions

  1. Remove the radish greens and trim each end then slice the radishes thinly.
  2. Place the thinly sliced radishes in a hot, sterilized pint jar.
  3. Bring the vinegar, sugar, water, salt, mustard seeds, black peppercorns, and bay leaf to a boil in an enameled saucepan or heat it in a glass dish in the microwave for 1 1/2-2 minutes.
  4. Ladle the hot pickling liquid over the sliced radishes.
  5. Wipe the jar rim seal with a tight-fitting lid.
  6. Place on a wire rack to cool for about an hour.
  7. Chill six hours before serving.
  8. Store in the refrigerator for up to 4 months. Enjoy!
