Quick Pickled Scallions
Description
Quick Pickled Scallions are made by preparing a basic brine from white distilled vinegar, water, sugar, and non-iodized salt, heated to dissolve all solids. Fresh green onions are trimmed and packed into a half-pint jar along with garlic halves and dried dill, which lend flavor complexity. The hot brine is poured over the scallions, which are then sealed and cooled to room temperature before refrigeration.
The pickling process preserves the scallions and softens their sharp bite slightly while imparting a gentle tang and subtle herbal and garlicky notes. After at least 48 hours refrigerated, the scallions are ready to use as a condiment or garnish, adding brightness and a mild pickled crunch to dishes like tacos, salads, or sandwiches.
This recipe yields about a half-pint jar and is practical for storing small amounts to enliven meals without a long wait. Refrigeration and the short waiting time make these pickled scallions a quick addition to home kitchens seeking easy flavor enhancers.
