Raglan Road Guinness Dipping Sauce

Raglan Road's Guinness Dipping sauce is legendary. Serve with homemade Irish soda bread.

Ingredients
Guinness Dipping Sauce
- 1 3/4 cups Guinness draught beer
- 1 2/3 cups brown sugar
- 1 cup extra light olive oil
Irish Soda Bread
- 3 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon kosher salt
- 2 1/2 teaspoons baking soda
- 1/4 cup cold unsalted butter cut into small pieces
- 1 1/2 cups buttermilk
- 1 tablespoon milk
Instructions
Guinness Dipping Sauce Directions
- Combine the Guinness and brown sugar in a medium-sized saucepan over low heat.
- Simmer the mixture for approximately an hour. The mixture will reduce by at half if not more. The more this reduces the better, as you will end up with a tangy sauce.
- Do not walk away while this is cooking, it will bubble up while cooking, and you need to stir it from time to time so it does not bubble over the stove.
- After the sauce boils, reduce the heat to simmer, and simmer for no more than 5 minutes. Then turn off the heat.
- Let the sauce cool to room temperature before serving.
- When you are ready to serve the sauce, combine equal amounts of the Guinness reduction and olive oil. Do not use extra virgin olive oil because the flavor will not be right. Use extra light olive oil.
- Serve the sauce with Irish Soda Bread.
Irish Soda Bread Directions
- Preheat oven to 350 degrees.
- In a large bowl, mix together flour, sugar, baking soda, and salt.
- Using a pastry blender, cut the butter into the flour mixture until the butter is well dispersed and you have a crumbly mixture.
- Add buttermilk and stir until just moistened.
- Knead the dough for 1 minute on a floured surface.
- Shape the dough into a ball and place it into a greased 1 1/2 quart casserole dish.
- Use a sharp knife to cut an X across the top.
- Brush the top with milk.
- Bake at 350 degrees for about 45 minutes and tented with foil for the last 15 minutes.
- Remove the bread from the baking dish and place it on a wire rack to cool.

- This is not Raglan Road’s Irish soda bread. This is an Irish soda bread that I like to make. I couldn’t get past the delicious dipping sauce to even begin to focus on their bread!
