Rainbow Macaroni Salad

Rainbow Macaroni Salad combines elbow macaroni with a colorful mix of fresh vegetables, olives, and Colby Jack cheese all coated in a subtly sweet, tangy mayonnaise-based dressing. This cold pasta salad offers a range of textures from crisp vegetable bites to creamy cheese cubes, balanced by a dressing with vinegar and a hint of lemon. The salad holds well refrigerated, making it a practical side for picnics or potlucks, and its vibrant mix of ingredients makes it visually appealing alongside grilled dishes or sandwiches.

Description

Rainbow Macaroni Salad features elbow macaroni as the base paired with chopped red onion, a medley of diced red, yellow, and orange peppers, black olives, halved grape tomatoes, broccoli florets, and cubed Colby Jack cheese. The sauce combines mayonnaise with white sugar, white vinegar, lemon juice, and onion powder to create a dressing that is both creamy and lightly tangy with a touch of sweetness.

After cooking and draining the macaroni, the salad assembles easily by tossing the pasta with the chopped vegetables and cheese, then mixing in the dressing. The chilled salad has contrasting textures: the tender pasta complements the crunchy vegetables and the softness of the cheese. The combination is refreshing and suitable for warm-weather meals or as a make-ahead dish.

This salad can be served as a side dish during barbecues or lunch spreads, providing a colorful and flavorful addition to many plates. It holds up well when refrigerated, allowing flavors to meld over time, which can enhance the taste after resting.
