Rhubarb mojito
Description
This cocktail combines muddled fresh mint leaves and lime juice with homemade rhubarb syrup and white rum. The rhubarb syrup is prepared by simmering rhubarb with sugar and water until soft and strained, resulting in a bright, slightly tangy syrup that adds unique flavor to the drink.
Once combined with rum, the mixture is topped with ice and soda water for a lightly fizzy, refreshing texture. Garnishes of mint leaves, lime slices, and rhubarb slices visually enhance the drink and complement its flavors.
The rhubarb mojito is suited to warm weather or occasions seeking a variation on the classic mint mojito that introduces a mild fruit tartness. It can be prepared in advance by making the syrup ahead of time.
