Ingredients

  • 1 1/2 cups arborio rice
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 1 clove garlic minced
  • 3 1/2 cups low-sodium vegetable broth
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. Transfer the sautéed onion and garlic into the rice cooker. Add the rinsed Arborio rice, vegetable broth, and a pinch of salt and pepper. Stir to combine. Close the lid and set the rice cooker to the standard cooking setting.
  3. Once the cooking cycle is complete, open the lid and stir in the grated Parmesan cheese until well combined and creamy. Adjust the seasoning with salt and pepper.
