This Roasted Asparagus Salad is simple to throw together and ready in under 30 minutes! Toss with a homemade almond butter balsamic dressing for a simple yet delicious side dish.

Ingredients
- 1 lb asparagus washed and trimmed
- 1/2 TBS balsamic vinegar
- 1 1/2 TBS olive oil
- 8 cups spring mix
- 6 oz feta crumbled
- 1/2 cup sliced almonds

Instructions
- Preheat oven to 375ºF. Toss asparagus with olive oil and balsamic vinegar and bake for 20-25 minutes, or until soft but with a slight crunch. Let asparagus cool on baking sheet, then transfer to cutting board and chop for salad.
- In large bowl, add mixed greens, crumbled feta, sliced almonds and chopped asparagus. Toss with about 1/4 cup of the dressing, or serve on side. Enjoy!
Notes
- Store any leftover dressing in closed container in fridge up to one week
