Roasted Brussels Sprouts with Bacon and Halloumi

Ingredients
- 4 lices Bacon lean
- ⅓ cup halloumi cheese diced into bite-sized pieces
- 2 cups Brussels sprouts halved
- 1 tbsp olive oil
- 1 clove garlic minced
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
Instructions
- Preheat oven to 400 degrees. Coat a baking sheet with olive oil cooking spray.
- Cook the bacon in a large skillet over med heat until just done (it will continue to cook in the oven), about 3-4 min.
- Remove all but a teaspoon of the grease. Add the diced halloumi cheese and sauté for 2-3 minutes or just turning golden brown (it will continue to cook in the oven).
- In a large bowl, toss the brussels sprouts with olive oil, minced garlic, sea salt. and freshly cracked pepper, to taste.
- Add the bacon and halloumi cheese.
- Spread the mixture on the prepared baking sheet, then place it into the oven.
- Bake for 15-20 min, tossing halfway through. Remove from oven and serve immediately. Enjoy!
