Ingredients

  • 1 c water
  • 2 tsp sugar
  • 2 ¼ tsp active dry yeast (1 package)
  • ¼ c PLAIN yogurt
  • 2 ¼ c unbleached all-purpose flour
  • ½ c whole wheat flour
  • 1 1/2 tsp salt
  • 1 Tbsp olive oil
  • 4 cloves roasted garlic*, smashed

Instructions

  1. In the bowl of your stand mixer combine all ingredients. Mix until well blended, then switch to the dough hook.
  2. Knead dough in the mixer for 10 min.
  3. Remove the bowl with the dough from the mixer, grease the top of the dough with cooking spray or oil. Cover the bowl and let the dough rise in a warm, draft-free place for 1 hour.
  4. Once the dough has doubled in bulk, remove it from the bowl and punch it down. Divide the dough into 8 evenly-sized pieces. Roll each piece into a ball. Cover the dough and let it rest for 10-15 min.
  5. Once the dough has rested, roll each ball into a circle, ¼ inch thick, keeping the dough you are not working with covered to keep it from drying out.
  6. Heat a non-stick skillet over medium-high heat. (We used a cast-iron skillet, and it worked marvelously.) Once the pan is hot, place as many rounds as fit nicely into the skillet. Cook each flatbread for 2 min on each side.
  7. Continue with remaining dough. (You may need to adjust the temperature as you continue cooking the bread and your skillet warms up. We ended up with our skillet over medium heat so that the bread would cook but not burn.)
  8. If you like, keep your bread in a warm (200F) oven while you cook the dough. This will keep all the rounds nice and toasty for serving.

Notes

  • *To roast your garlic: wrap the peeled cloves in aluminum foil. Place in a 400F oven for 30 min. When it is finished, the garlic cloves should be soft and incredibly fragrant. Smashing them with a fork should be quite an easy task.
