Roasted Garlic Gravy Recipe
Description
The Roasted Garlic Gravy recipe begins by roasting a whole head of garlic seasoned with olive oil, salt, and pepper until soft and caramelized. The roasted cloves are mashed into a paste, which is then incorporated into a butter and flour roux cooked until smooth and golden.
Chicken stock is gradually whisked in to create a lump-free, velvety gravy. The roast garlic paste adds a rich, deep flavor that elevates the traditional gravy base. The gravy is seasoned to taste and simmered gently until thick enough to coat the back of a spoon.
This gravy pairs well with poultry or meat dishes and can be prepared ahead of time, refrigerated for up to four days, and gently reheated. To adjust richness, a splash of cream can be added. Continuous whisking helps prevent lumps and burning during cooking.
Ensuring the garlic is fully tender and caramelized is key to maximizing flavor. The recipe yields about 1 2/3 cups, with typical serving sizes around one-third cup.
