Roasted Parmesan Asparagus

This is one of the easiest and most flavorful ways to prepare this veggie. And you know you can’t ever go wrong with Parmesan!

Ingredients

  • 2 pounds asparagus trimmed
  • 3 tablespoons olive oil
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • ½ cup Parmesan Cheese freshly grated
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Place asparagus in a single layer onto the prepared baking sheet. Drizzle with olive oil, salt and pepper, to taste; gently toss to combine. Top with Parmesan.
  3. Place into oven and roast for 10-12 minutes, or until tender but crisp.
  4. Serve immediately, drizzled with balsamic vinegar.
