Roasted Portobella Mushrooms

This Roasted Portobella Mushroom Sandwich is exquisite. Loaded with flavors from the pesto, roasted red peppers, and feta.

Ingredients

Servings
  • Portobella Mushroom
  • 1 -2 Tablespoons of coconut oil or olive oil
  • pepper
  • focaccia bread
  • basil pesto
  • roasted red peppers
  • Red onion slices
  • Feta cheese crumbles or provolone cheese
  • lettuce

Instructions

  1. Preheat oven to 425 degrees F
  2. Wash the mushrooms and brush with melted coconut oil or olive oil.
  3. Sprinkle with pepper
  4. Bake for 20-25 minutes.
  5. Spread 1-2 tablespoons of pesto sauce on the bottom slice of Faccocia bread.
  6. Top with red onion slices, roasted red peppers, lettuce and feta cheese. If you use provolone cheese, it is fabulous to pop this in the microwave or in a toaster oven and melt the cheese.
