Ingredients

  • Drizzle of olive oil
  • 2-3 yams or sweet potatoes, peeled and large dice
  • Sea Salt and Freshly Cracked Pepper
  • 1-2 tbsp dried cranberries
  • 1-2 tbsp pecan pieces
  • 1-2 tbsp butter melted, to taste
  • 1 tbsp real maple syrup

Instructions

  1. Preheat the oven to 375 degrees. Coat a baking sheet with cooking spray.
  2. Place the diced yam on the baking sheet then drizzle with olive oil and season with sea salt and freshly cracked pepper, to taste.
  3. Roast in the oven for 25-30 minutes or until yam is fork-tender, tossing halfway through roasting.
  4. Coat a baking dish with cooking spray.
  5. Pour the roasted yam into the baking dish followed by the dried cranberries and pecan pieces.
  6. Mix the melted butter and maple syrup together then drizzle on top of the yam mixture, toss to coat. Cover with tin foil and bake for 10 minutes.
  7. Remove the foil and continue baking for 5 minutes. Taste and drizzle with more syrup if needed. Serve immediately. Enjoy.
