Rocky Road Cake
Description
Rocky Road Cake is a no-bake dessert that starts by melting dark chocolate, butter, and corn syrup together over simmering water. Once cooled slightly, chopped chocolate fingers, Haribo candies, mini chocolate eggs, and mini marshmallows are mixed in to evenly coat with the smooth chocolate base. The mixture is then spread into a lined baking tray and chilled in the refrigerator for a minimum of two hours or overnight to set firmly.
The result is a dense, sweet treat where the bittersweet dark chocolate balances the sugary candies and chewy marshmallows, providing a combination of textures and flavors. The cake cuts into portable squares ideal for serving as a casual snack or dessert.
This recipe requires no baking and depends on cooling time for firming, making preparation mostly assembly and simple melting. It can be adapted by changing the types of candies used.
Ingredients
- 2 cups dark chocolate Bournville brand, 350g
- 2/3 cup butter unsalted
- 1/3 cup corn syrup 50g, or golden syrup
- 3/4 cup chocolate fingers 140g, chopped
- 1/2 cup Haribo candies 100g
- 3/4 cup mini eggs candy 90g, chopped
- 3/4 cup mini marshmallows 90g
Instructions
- Add the Bourneville, butter, and syrup into a heatproof bowl over some simmering water and let the ingredients melt whilst frequently stirring them.
- When melted, let the chocolate mixture cool for a few mins before adding in the chocolate fingers, Haribo, Mini chocolate eggs and marshmallows and mixing until everything is well coated with the chocolate mixture.
- Pour into a lined baking tray and spread the mixture out to the corners.
- Refrigerate the rocky road cake for 2 hrs minimum or overnight and then cut into squares before serving.
Notes
- Chill the cake thoroughly for at least 2 hours to ensure it sets properly for clean slicing.
- Use good quality dark chocolate like Bournville for better texture and flavor.
- Store leftovers in the refrigerator to maintain freshness and firmness.
