Rocky Road Cake

Rocky Road Cake combines melted dark chocolate, butter, and syrup with a mix of chocolate fingers, Haribo candies, mini eggs, and marshmallows. The mixture is chilled until firm and then cut into squares, creating a rich, textured dessert that blends smooth chocolate with chewy and crunchy confections.

Description

Rocky Road Cake is a no-bake dessert that starts by melting dark chocolate, butter, and corn syrup together over simmering water. Once cooled slightly, chopped chocolate fingers, Haribo candies, mini chocolate eggs, and mini marshmallows are mixed in to evenly coat with the smooth chocolate base. The mixture is then spread into a lined baking tray and chilled in the refrigerator for a minimum of two hours or overnight to set firmly.

The result is a dense, sweet treat where the bittersweet dark chocolate balances the sugary candies and chewy marshmallows, providing a combination of textures and flavors. The cake cuts into portable squares ideal for serving as a casual snack or dessert.

This recipe requires no baking and depends on cooling time for firming, making preparation mostly assembly and simple melting. It can be adapted by changing the types of candies used.
