Salmon Phyllo Cups

Made with prepared phyllo cups, Boursin cheese and smoked salmon, these elegant Salmon Phyllo Cups are simple and delicious

Ingredients

  • 15 phyllo cups 1 package
  • 1/4 cup Boursin cheese I used shallot and chive flavor
  • 3 ounces lox or sliced smoked salmon, cut into 15 approx. 3/4 x 1.5 inch pieces
  • 1 dill large sprig
  • 2 Tablespoons capers

Instructions

  1. Thaw phyllo cups according to package directions.
  2. Spoon a scant teaspoon of cheese into each cup (I found it was easier to roll into a ball, then flatten). Top with a folded piece of salmon.
  3. Garnish with a mini-sprig of dill and 2-3 capers.
