  • 1 pound fresh salmon, skinned and cut into 1-inch pieces
  • 4 ounces smoked salmon, chopped
  • 2 cups white wine
  • Peel of 1 lemon
  • 2 teaspoons black peppercorns
  • 2 sprigs fresh dill
  • 2 bay leaves
  • 1 teaspoon minced fresh dill
  • 1 teaspoon chopped chives
  • 1 tablespoon fresh lemon juice
  • cup sour cream
  • salt and pepper, to taste
  • baguette sliced and toasted

Instructions

  1. Add 2 cups white wine to a large, deep skillet. Add peel of 1 lemon, 2 teaspoons black peppercorns, 2 sprigs fresh dill, and 2 bay leaves. Simmer over low heat for 10 minutes, allowing the wine to infuse with the aromatics.
  2. Add 1 pound fresh salmon, to the wine and simmer, stirring occasionally for just over 2 minutes, until the salmon has just barely turned opaque on all sides. Remove it from the pan, cover, and chill for about an hour.
  3. Once the salmon has chilled, flake it gently into a medium-sized bowl.
  4. Add 4 ounces smoked salmon, 1 teaspoon minced fresh dill, 1 teaspoon chopped chives, 1 tablespoon fresh lemon juice, ⅓ cup sour cream and salt and pepper, to taste, to the bowl with the flaked salmon and mix until combined.
  5. Cover and chill for at least an hour to let the flavors combine. Serve on slices of toasted baguette.
