Shrimp & Mango Ceviche Recipe

For Ceviche

  • 2 lbs Shrimp cooked
  • 1 Mango diced
  • 1/2 onion Sliced, medium purple
  • 1/4 Cup cilantro chopped
  • 1 Tablespoon capers

For Ceviche Dressing

  • 1/2 Cup olive oil
  • 1/4 Cup vinegar
  • lemon juice of 1
  • 1 ts sugar
  • 2 oz caper juice about 1/4 of the jar

Instructions

  1. Whisk all dressing ingredients together in a bowl
  2. In a big bowl add the shrimp, onion, capers, cilantro and mango
  3. Toss the dressing in with the shrimp
  4. Let it marinate in the fridge for a minimum of 2 hours
  5. Enjoy!
