Ingredients
For Ceviche
- 2 lbs Shrimp cooked
- 1 Mango diced
- 1/2 onion Sliced, medium purple
- 1/4 Cup cilantro chopped
- 1 Tablespoon capers
For Ceviche Dressing
- 1/2 Cup olive oil
- 1/4 Cup vinegar
- lemon juice of 1
- 1 ts sugar
- 2 oz caper juice about 1/4 of the jar
Instructions
- Whisk all dressing ingredients together in a bowl
- In a big bowl add the shrimp, onion, capers, cilantro and mango
- Toss the dressing in with the shrimp
- Let it marinate in the fridge for a minimum of 2 hours
- Enjoy!
