Shrimp Nachos

Ingredients

  • ¼ cup unsalted butter
  • 1 package Shrimp thawed, peeled, deveined, small, frozen, raw
  • 2 teaspoons taco seasoning divided
  • 4 ounces cream cheese softened
  • 1 ½ cups heavy cream
  • 1 cup pepper jack cheese shredded, 113 g
  • 1 cup mozzarella cheese shredded
  • 1 bag tortilla chips

Toppings

  • 1 medium tomato finely diced
  • ¼ cup red onion finely diced
  • ¼ cup cilantro chopped
  • 1 medium jalapeno pepper seeded, finely diced
  • sour cream for serving
  • salsa for serving
  • lime for serving, wedges

Instructions

  1. In a medium nonstick skillet over medium-low heat, melt butter. Add shrimp and 1 teaspoon taco seasoning. Cook for 3-5 minutes, or until the shrimp is lightly browned and fully cooked, forming a 'c' shape. Transfer shrimp to a plate and tent to keep warm. Set aside.
  2. In the same skillet over medium-low heat, combine cream cheese and heavy cream. Stir continuously until the cream cheese is completely melted and fully incorporated into the cream.
  3. Add Pepper Jack, mozzarella, and 1 teaspoon taco seasoning. Stir until the cheese is melted. Remove from heat.

Assembly

  1. Spread tortilla chips on a large serving platter. Pour the cheese sauce evenly over the chips. Top with shrimp, tomato, red onion, cilantro, and jalapeno.
  2. Serve with sour cream, salsa, and lime wedges. Enjoy!
