Shrimp & Pesto Jalapeno Bites

Shrimp & Pesto Jalapeno Bites are an amazing appetizer with a combination of awesome flavors. They are easy to make and will be a crowd pleaser! You can double the recipe for a larger crowd!

Ingredients

  • 6 jalapeños
  • 12 Shrimp cooked and tail off, chopped finely, medium size
  • 2 tablespoons basil pesto
  • 2 tablespoons mayonnaise reduced fat
  • 1 garlic clove minced
  • cheese any type (I used cheddar, but will try a 4 cheese mexican blend next time, shredded
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 425 degrees
  2. Wash jalapeño peppers and pat dry
  3. Cut Jalapeños in half and take out all the seeds
  4. (if you are doing them on the grill, brush bottom of jalapeños with olive oil or any cooking oil)
  5. Add chopped shrimp, pesto, mayonnaise, minced garlic, and salt and pepper to a bowl and mix until well combined
  6. Stuff jalapenos with the shrimp mixture
  7. Sprinkle cheese on top of each jalapeno
  8. Spray a broiler pan with non stick cooking spray
  9. Bake for 5-10 minutes, or until the cheese is melted
  10. (If you are cooking them on the grill, place the jalapenos on the grill for 3-4 minutes on medium-high heat)
