Shrimp Scampi Dip
Description
This dip begins with melting butter in a skillet, where shrimp is sautéed alongside minced garlic and red pepper flakes, imparting spiciness and aromatic depth. A splash of white wine and fresh lemon juice adds acidity and brightness, balanced with salt and pepper for seasoning. After simmering, this mixture is combined off heat with cream cheese, sour cream, mayonnaise, chopped parsley, mozzarella, and Parmesan cheeses to create a creamy, flavorful base.
Spread in a baking dish and topped with additional mozzarella, the dip is baked until bubbly and lightly golden on top. The result is a warm, rich dip with tender shrimp throughout, combining garlicky, tangy, and cheesy elements with a hint of heat. The creamy texture pairs well with crusty bread or crackers.
For a non-alcoholic version, white wine can be substituted with chicken stock without changing the core flavor much, making it adaptable for varied dietary preferences.
Ingredients
- 2 tablespoons butter unsalted
- 8 ounces Shrimp peeled, deveined and roughly chopped, medium
- 4 cloves garlic minced
- ½ teaspoon red pepper flakes or more, to taste
- ¼ cup white wine
- 2 tablespoons lemon juice freshly squeezed
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 4 ounces cream cheese at room temperature
- ¼ cup sour cream
- 3 tablespoons mayonnaise
- 2 tablespoons parsley chopped fresh leaves
- ½ cup mozzarella cheese divided, shredded
- 2 tablespoons Parmesan Cheese grated
Instructions
- Preheat oven to 350 degrees F. Lightly oil a 9-inch baking dish or coat with nonstick spray.
- Melt butter in a large skillet over medium high heat. Add shrimp, garlic and red pepper flakes. Cook, stirring occasionally, until pink, about 2 minutes. Stir in wine and lemon juice; season with salt and pepper, to taste.
- Bring to a simmer; remove from heat and stir in cream cheese, sour cream, mayonnaise, parsley, 1/4 cup mozzarella and Parmesan.
- Spread mixture into the prepared baking dish; sprinkle with remaining 1/4 cup mozzarella. Place into oven and bake until bubbly and golden, about 10-12 minutes.
- Serve immediately.
Notes
- White wine can be replaced with chicken stock to make a non-alcoholic version without compromising flavor.
