Ingredients

  • 1 ½ cups cottage cheese 2% milkfat
  • ¼ cup milk 1% low-fat
  • 1 tablespoon cornstarch
  • 1 1/2-2 cups sharp cheddar cheese save a little to sprinkle on top of the dip, shredded, low-fat
  • 2 teaspoons olive oil
  • 1 bell pepper finely chopped (save a little to sprinkle on top of the dip)
  • 1 onion finely chopped, medium
  • 3 cloves garlic minced
  • ½ pound ground turkey or chicken
  • ½ teaspoon mustard powder ground
  • 1 tablespoon Worcestershire sauce
  • salt
  • black pepper
  • paprika if desired
  • sharp cheddar cheese additional shredded; diced; for toppings
  • green bell pepper additional shredded; diced; for toppings

Instructions

  1. Place cottage cheese in food processor and process until smooth
  2. Add milk, cornstarch and shredded cheese and process until combined
  3. In a large pan, heat oil and saute bell pepper, onion, and garlic until onions are softened, about 3-4 minutes
  4. Add ground turkey and cook until browned, breaking up pieces
  5. Add mustard, Worcestershire sauce, and salt and pepper to taste
  6. Cook a minute or two for flavors to develop
  7. Stir in cottage cheese mixture and turn off heat
  8. Stir until cheese is melted and dip is creamy
  9. Transfer to serving bowl and sprinkle with a little shredded cheese, green peppers, and paprika if desired
