Slim Super Bowl Jalapeno Poppers

Ingredients

  • 12 jalapeños seeded and membranes removed
  • 1 cream cheese low-fat, packaged
  • 1 cup panko breadcrumb low sodium
  • 6 turkey bacon cooked and crumbled, strips
  • 2 Tbsp. olive oil
  • 1 cup Mexican blend cheese low-fat shredded
  • 1/2 tsp. garlic powder
  • 1/4 tsp. onion powder
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. Heat olive oil in a medium skillet and add in Panko breadcrumbs. Stir until breadcrumbs turn slightly golden, being careful not to burn them. Remove from heat and set aside.
  3. In a medium bowl, mix together cream cheese, Mexican blend cheese, and spices. (I used my hands!)
  4. Stuff each jalapeno half with 1-2 Tbsp. of the cheese mixture and place on the prepared baking sheet. Bake in the oven for 15 minutes, or until cheese becomes gooey!
  5. Top with breadcrumbs and turkey bacon and enjoy immediately!
