Slow Cooker Black Beans

Ingredients

  • 2 cups black beans dried, rinsed and picked over for small rocks
  • 4 cups water
  • 1/2 yellow onion medium, cut into wedges
  • 3 garlic cloves
  • 1 epazote sprig, fresh, optional
  • 1 teaspoon cumin ground
  • kosher salt
  • lime juice juice of 1/2 lime, plus more to taste
  • black pepper freshly ground

Instructions

  1. Place black beans, water, onion, garlic, epazote, cumin and 3/4 teaspoon kosher salt in a slow cooker, stirring to combine. Cook on high for 4 hours, stirring once or twice.
  2. Using tongs, remove and discard the onion, garlic and epazote. Stir in lime juice, then season to taste with salt, pepper and more lime juice.
