Slow Cooker Chicken and Stuffing Recipe

Crock Pot chicken and stuffing is a no-stress, no-mess meal. Juicy chicken, flavorful stuffing, and the perfect blend of spices make for a delicious dinner.

  • 5 pound whole chicken
  • 2 carrots diced
  • 1 small yellow onion diced
  • 2 celery ribs diced
  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika
  • 6 ounce box stuffing mix Like Stove Top, any flavor

Instructions

  1. Clean out the inside of the chicken and throw away the gizzards.
  2. Dice the carrots, onions and celery. Put them in the bottom of the slow cooker.
  3. Put the chicken on top of the veggies. Pour the melted butter over the chicken, add the seasonings on top, and rub it all over. Season with salt and black pepper if you want.
  4. Place the lid on and cook on high 4-6 hours.
  5. Remove the chicken, set it on a platter, and cover with aluminum foil to keep warm. Pour the liquid from the crock pot into a measuring cup. Return 1 1/2 cups of liquid to the slow cooker along with all the veggies. Discard the additional liquid.
  6. Add the box of stuffing mixture to the slow cooker and stir well. Put the lid back on and let cook for another 10 minutes. Fluff with a fork when done.
  7. Slice the chicken and serve with the stuffing.

Notes

  • Store any leftovers in an airtight container in the fridge for 2-3 days.
  • You can also make this with skinless chicken breasts, although they will cook a little more quickly, so adjust the time.
  • You can also cook this on low for 7-8 hours. However, in my opinion the chicken has a better texture when you cook this on high.
  • A 7 or 8 quart slow cooker is necessary to fit the whole chicken.
  • Store any leftovers in an airtight container in the fridge for 2-3 days.
  • You can also make this with skinless chicken breasts, although they will cook a little more quickly, so adjust the time.
