Ingredients
- 4 boneless skinless chicken breasts
- 1 packet 1 oz ranch dressing mix
- 1 packet 1 oz gravy mix (chicken or brown gravy)
- 1 can 10.5 oz cream of chicken soup
- ½ cup chicken broth
- 1 tablespoon olive oil optional, for searing
- salt and pepper to taste
Instructions
- If desired, heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then sear each side for 2-3 minutes until lightly golden. This step adds extra flavor but is optional.
- Place the chicken breasts into the slow cooker.
- In a bowl, whisk together the ranch dressing mix, gravy mix, cream of chicken soup, and chicken broth until smooth.
- Pour the gravy mixture over the chicken breasts in the slow cooker.
- Cover and cook on low for 6 hours, or until the chicken is tender and easily shreds with a fork.
- Once cooked, remove the chicken breasts from the slow cooker and set aside. Stir the gravy to combine and adjust seasoning with salt and pepper if needed.
- Serve the chicken breasts with the gravy over mashed potatoes, rice, or vegetables.
Notes
- If you prefer a thicker gravy, whisk in a bit of cornstarch mixed with water (about 1 tablespoon cornstarch to 1 tablespoon water) during the last 30 minutes of cooking.
- For extra flavor, you can add garlic powder, onion powder, or herbs like thyme or rosemary to the gravy mixture.
- Leftover chicken and gravy can be stored in the fridge for up to 3 days and reheated on the stove or in the microwave.
- You can substitute the chicken breasts with boneless, skinless chicken thighs for a juicier alternative.
- This dish pairs well with mashed potatoes, rice, or steamed vegetables for a complete meal.
- If you don’t have ranch seasoning, you can substitute with a packet of Italian seasoning or a homemade seasoning blend.
- This recipe can be doubled for larger groups or meal prepping.
