- 2 tablespoons olive oil
- 2 pounds sirloin tips or beef stew meat cut into 1-inch pieces
- 1 large onion diced
- 3 cloves garlic minced
- 3 tablespoons tomato paste
- 2 cups beef broth
- 1/4 cup Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons cornstarch used for slurry
- 3 tablespoons water
- fresh parsley chopped (for garnish)

Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes to the skillet and sear until browned on all sides, about 3-5 minutes. Do this in batches if necessary to avoid overcrowding the pan. Transfer the seared beef to the slow cooker. 2 tablespoons olive oil, 2 pounds sirloin tips or beef stew meat
- In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1-2 minutes. Stir in the tomato paste, cooking for another 2 minutes. 1 large onion, 3 cloves garlic, 3 tablespoons tomato paste

- Close the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- About 30 minutes before serving, whisk together the cornstarch with 3 tablespoons of water in a small bowl until smooth. Stir the cornstarch mixture into the slow cooker. 3 tablespoons cornstarch, 3 tablespoons water,
