Slow Cooker Chicken Fajitas

These yummy Chicken Fajitas are super easy to make in your Slow Cooker, stovetop or oven. Packed with flavour, kid friendly and Syn Free on Slimming World. One serving is SYN FREE | 4 WeightWatchers SmartPoints without added toppings or sides

Ingredients
- 450 g (1 lb) skinless mini chicken fillets (chicken tenders)
- 2 Red Onions , sliced into thin strips
- 1 red bell pepper , sliced into thin strips
- 1 green bell pepper , sliced into thin strips
- 1 yellow or orange bell pepper , sliced into thin strips
- 1 tomato, seeded and diced replace with 2 tbsp tomato paste for sheet pan & frying pan methods
- 3 tsp granulated sweetener such as Sukrin (optional)
- 1 tsp mild chilli powder use cayenne pepper for spicier fajitas
- 1 tsp smoked or sweet paprika
- 1 tsp ground cumin
- 1 tsp garlic granules
- 1 tsp dried oregano
- 1 tsp salt
- Juice of half a lime plus extra wedges to serve
- Coriander (cilantro)leaves to garnish
- Salt and pepper to season to taste

Instructions
Slow Cooker Chicken Fajitas
- Add the onions, peppers, diced tomato and chicken breasts into your slow cooker.
- Add the seasoning and spices and toss to combine. Squeeze the lime over it all.
- Cover and cook on HIGH for 2 hours (it’s really quick!) or on LOW for 3-4 hours.
- Use two forks to shred the chicken and check the seasoning. Add salt and pepper if needed. Serve over corn wraps or see my other suggestions.
Sheet Pan Chicken Fajitas
Replace the sliced tomato with two tablespoons of tomato purée for this method.
- Preheat the oven to 200C /400F. Spray a large rimmed sheet pan with low calorie cooking spray.
- Combine the chicken, seasoning and lime juice in a large bowl. If you have time leave to marinate for an hour (or overnight) otherwise you can use straight away.
- Add the peppers and onions to the chicken and toss to combine. Spread in an even layer on the prepared baking tray.
- Cook for 15 minutes in the centre of the oven.
- Switch to grill (broiler) and transfer the tray to the top rack, a few inches away from the grill. Cook for 4-5 minutes until the vegetables are a little charred - keep an eye on them.
- Use two forks to shred the chicken into smaller pieces. Check the seasoning and serve.
Stovetop Method
Replace the sliced tomato with two tablespoons of tomato purée for this method.
- Slice the chicken into thin strips. Combine the chicken, spice mix, tomato purée and lime juice in a large bowl. If you have time leave to marinate for an hour (or overnight) otherwise you can use straight away.
- Add all the vegetables to the chicken and toss to combine.
- Spritz a frying pan with low calorie cooking spray such as Fry Light. Pan fry the chicken, onions and peppers over high heat for about 8-10 minutes, or until the chicken is cooked through.
- Check the seasoning and serve with your choice of sides.
