Smoked Bourbon Peach Cobbler
Description
The recipe starts with preparing the topping dough, which is a mix of flour, baking powder, baking soda, sugar, salt, and butter, combined until crumbly before incorporating buttermilk for a tender consistency. The filling blends peaches with brown sugar, bourbon, maple syrup, vanilla, cinnamon, lemon juice, and a bit of flour to thicken. Folding in the peaches carefully preserves their shape and texture.
The filling is spread into a greased cast iron skillet, then topped with drops of the biscuit dough. Cooking on a grill over indirect heat at around 350°F ensures even baking, while imparting subtle smoky notes. The cobbler is baked until the topping is golden brown, around 45 to 50 minutes.
This dessert is well-suited for serving warm, optionally with ice cream for contrast. The bourbon and maple syrup add depth to the natural sweetness of the peaches, while the biscuit topping provides a soft, buttery texture balancing the fruit filling.
