Smoky Chipotle Chili

Smoky chipotle chili recipe uses a peppers and spices combo that makes a chili that has plenty of heat without being mouth-scorching hot.

Ingredients

  • 1.5 pounds ground beef
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 large onion finely diced
  • 4 cloves garlic minced
  • 1 Serrano pepper finely diced and seeded (See note #1)
  • 1 Jalapeno pepper finely diced and seeded
  • 3 ounces chipotle peppers in adobo sauce finely dice the chipotle chilies
  • 4 cups beef broth
  • 20 ounces diced tomatoes with green chiles we use Rotel original
  • 15.5 ounces canned black beans drained and rinsed
  • 1 tablespoon red wine vinegar
  • ¾ cup fresh cilantro finely chopped

Chili Seasoning:

  • 3 tablespoons chili powder
  • 1 teaspoon Smoked chipotle chili powder
  • 2 tablespoons cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon hot smoked paprika

Instructions

  1. In a small bowl mix together all of the ingredients for the chili seasoning.
  2. Brown ground beef in batches adding salt and black pepper as you go. Set to the side.
  3. Sauté onions, garlic, serrano pepper and jalapeno peppers until onions are translucent. Approximately 3-5 minutes. (See note #1)
  4. Add the browned ground beef to the mixture along with the chili seasoning, finely minced chipotles in adobo, beef broth, diced tomatoes and green chiles, and black beans. Stir together, cover with a lid, and let it simmer for 45 minutes. (See note #2)
  5. Stir in the red wine vinegar and let simmer uncovered for another 15 minutes.
  6. Stir in the cilantro and serve.

Notes

  • The serrano pepper will be the spiciest thing you add to this chili. We have removed the ribs and seeds to help moderate the spice level but if you want to tone down the heat you can skip the serrano pepper completely. 
  • If you want to up the heat you can add more chipotles and a few tablespoons of the adobo sauce to your chili.
