S’mores Bars

S'mores bars have a layer of melty chocolate and toasty marshmallow sandwiched between layers of butter graham cracker dough. These s'mores bars have all of the flavor of s'mores - no campfire necessary!

Ingredients
- 2 cups all purpose flour
- 2 cups Graham cracker crumbs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup salted butter at room temperature
- 1½ cups packed light brown sugar
- 2 large eggs beaten
- 1 teaspoon vanilla extract
- 2 cups marshmallow cream
- 2 cups milk chocolate chips
Instructions
- Preheat the oven to 350 degrees F.
- Line a 9-by-13-inch baking pan with parchment paper, leaving a 2-inch overhang on 2 sides.
- In a large mixing bowl, beat the butter and sugar together until well-combined, about 2 minutes on medium.
- Beat in the eggs and vanilla until well combined.
- Stir in the flour, graham cracker crumbs, baking powder and salt until combined.
- Divide the dough in half.
- Press half of the dough into an even layer in the prepared pan.
- Spread the marshmallow cream over the dough and sprinkle chocolate chips on top.
- Drop pieces of the remaining dough over the top in chunks. Don't worry about covering the top with the dough. The marshmallow and chocolate chips should show through.
- Bake until golden brown, about 30-35 minutes.
- Place the pan on a wire rack to cool completely.
- Remove from the pan, and cut into bars.
- If the bars aren’t cutting well, chill the bars, and then cut.
Notes
- Flour: Be sure to properly measure the flour. I like to weigh the ingredients to ensure that the measurements are accurate. If using measuring cups, sift or stir the flour. Then, lightly spoon into the measuring cup and level. This will help to avoid packing in the flour. Packing in the flour will give you a dry, heavy, or doughy bars.
- Graham cracker crumbs: The crumbs need to be finely ground. You can either grind the graham cracker crumbs or buy graham cracker crumbs.
- Butter: If you'd like to use unsalted butter, increase the salt to 1/2 teaspoon.
- Marshmallow creme: Marshmallow creme is sometimes called marshmallow fluff.
- Chocolate chips: You can use bittersweet chocolate chips, dark chocolate chips, semisweet chocolate chips, or milk chocolate chips depending on how sweet you'd like the chocolate to be.
