- 1 (15.25 ounce) box strawberry cake mix
- ½ cup (1 stick) unsalted butter, melted
- 2 large eggs
For the Filling
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups powdered sugar
- ¼ cup strawberry jam or preserves
- 1 teaspoon vanilla extract
- Pink food coloring (optional)
Instructions
- Preheat and prepare: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Combine ingredients: In a large bowl, combine the strawberry cake mix, melted butter, and eggs. Mix until just combined. Do not overmix.
- Scoop and bake: Use a cookie scoop or tablespoon to scoop the dough onto the prepared baking sheets, leaving about 2 inches between cookies.
- Bake: Bake for 8-10 minutes, or until the edges are lightly golden brown. Be careful not to overbake. The cookies will be soft.
- Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Make the filling: While the cookies are cooling, prepare the filling. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Stir in the strawberry jam or preserves and vanilla extract. Add pink food coloring, if desired, to achieve your desired shade.
- Assemble the cookies: Once the cookies are completely cooled, spread a generous amount of frosting on the bottom of one cookie and top with another cookie. Gently press together to form a sandwich.
- Serve: Serve immediately or store in an airtight container.
