Southern Pecan Pralines

These Pecan Pralines are the ultimate sweet-and-salty treat that’s perfect for the holidays—or any time you’re craving something special! With their delightfully crunchy texture and chewy caramelized coating, they strike the perfect balance of flavors in every bite.

Ingredients

  • 1 cup brown sugar packed (You can use light or dark)
  • 1/3 cup whipping cream
  • 1/4 cup unsalted butter 1/2 of a stick
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves
  • 1 Cup powdered sugar
  • Pinch salt

Instructions

  1. Line a large baking sheet with parchment paper. Set it aside.
  2. In a medium saucepan, add the brown sugar, butter, salt and cream and bring it to a boil over medium heat, stirring often.
  3. Once the mixture reaches a full boil (where it continues to bubble when you stir), start a timer for one minute.
  4. Allow it to boil without stirring.
  5. After a minute, remove the mixture from heat and add the powdered sugar. Whisk quickly until smooth.
  6. Add in the vanilla and pecans and stir until fully incorporated.
  7. Allow the mixture to cool slightly for a minute or so. Don’t walk away!
  8. Use a cookie scoop to drop Tablespoons of the pecan mixture onto the prepared baking sheet.
  9. Allow the pralines to cool and set before serving.

Notes

  • Make sure to work quickly.
  • Don’t walk away from the pecan mixture while waiting for it to cool. It’ll turn into a hard mess! However, if it does become too hard, add a teaspoon of cream to the mixture and stir to smooth it out.
  • If you wait too long and it crystallizes completely, you can reheat and start again.
  • You can use salted butter, but then make sure to omit the salt.
  • I’ve learned that pralines are not always easy. They are finnicky! I’ve tried them using a candy thermometer and they turned out fine as well. Using this method yielded the least grainy candy.
  • If things fail, don’t waste the mixture! If it doesn’t set or sets too hard, eat it anyway!
