Spicy Mini Bell Pepper Nachos

Ingredients

  • 1 avocado medium
  • 3/4 cup salsa hot
  • 1 jalapeño fresh
  • 1 yellow corn canned
  • 1 black beans canned low-sodium
  • 1/2 cup diced tomatoes
  • cilantro for garnish
  • salt to taste
  • black pepper to taste
  • 1 mini Bell Pepper bagged
  • 1/2-1 cup cheddar cheese shredded
  • 1/2 cup Greek yogurt optional for topping, plain, non-fat

Instructions

  1. In a medium bowl mix corn, black beans, salsa, tomatoes, jalapeno and avocado. Season with salt and pepper.
  2. Cut the bell peppers in half and remove the seeds. Arrange bell pepper halves on a baking sheet lined with aluminum foil.
  3. Fill each half with the black bean/corn mixture. Top with cheddar cheese. Place peppers in the oven - broil for 1-3 minutes or until cheese has melted.
  4. Serve with a dollop of Greek yogurt and cilantro! Enjoy!
