Sri Lankan Devilled Beef (Dry Beef Curry)
Description
This recipe starts by marinating thin strips of chuck beef with Sri Lankan curry powder, salt, sugar, and freshly cracked black pepper to infuse flavor. The beef is quickly stir-fried at high heat to caramelize the exterior while keeping the interior tender. After resting the beef, aromatics such as grated ginger and finely chopped garlic are stir-fried briefly to release their fragrance.
The dish is then assembled by adding sliced red onion, tomato wedges, banana peppers, and optional green chili slices to the pan along with the cooked beef. A combination of curry powder, sugar, tomato ketchup, apple cider vinegar, and soy sauce is added and stir-fried until the peppers soften slightly. Finally, crushed chili flakes are mixed in to adjust the heat level.
The devilled beef is served hot, typically accompanied by rice. It offers a dry but saucy texture with spicy, tangy, and savory undertones typical of Sri Lankan devilled style dishes.
Ingredients
For the beef
- 1 lb chuck beef cut into thin strips
- 1 tsp Sri Lankan curry powder
- ½ tsp salt
- 1 ½ tsp sugar
- ½ tsp black pepper freshly cracked
- 3 tbsp neutral cooking oil generic cooking oil
For the Devilled Beef Curry
- red onion cut into the same size as the peppers
- 4 garlic chopped finely, cloves
- 1 inch ginger piece, grated or minced finely
- 1 tomato cut into wedges
- 3 - 4 banana pepper cut into rings or squares, or anaheim pepper
- 3 - 4 green chili pepper optional, jalapeno or serrano or other, cut into slices
- 1 tsp Sri Lankan curry powder
- 1 tsp sugar
- ¼ cup tomato ketchup
- 1 tbsp apple cider vinegar or coconut vinegar, white wine vinegar
- 1 tbsp soy sauce more if needed
- 1 tbsp chili flakes reduce to ½ tbsp or more depending on your heat preference, crushed
Instructions
For the Beef
- Place all the ingredients for the beef in a bowl (except the oil), and mix well. Leave the beef to marinate for at least 30 minutes.
- Place the oil in a non-stick pan and heat over medium high to high heat. When the oil is hot, add the beef and stir-fry until the beef starts to caramelize.
- Remove the beef from the pan and set aside.
For the Devilled Beef Curry
- Into the same non-stick pan, add ginger and garlic and stir-fry just for a few seconds.
- Add the onion, tomato, banana peppers and green chili peppers and the cooked beef.
- Stir-fry to mix through. Add the curry powder, sugar, ketchup, vinegar, and soy sauce and stir-fry for a few minutes. When the peppers have slightly softened, add the crushed chili flakes (and more soy sauce to taste). Mix for a minute and then remove it from the heat.
- Serve with rice.
