St. Patrick's Day Crinkle Cookies are soft, lightly underbaked sweets made from a blend of white cake mix and instant pistachio pudding, then rolled in powdered sugar for a crinkled finish. Description

This quick dough combines white cake mix and instant pistachio pudding with eggs, vegetable oil, and vanilla extract. The batter is sticky and rolled in confectioners' sugar before baking, creating the characteristic crackled surface as the cookies bake.

The cookies bake at 375°F for about 7 to 9 minutes, with the bottoms set but middles slightly soft, ensuring a tender texture. Cooling on the baking sheet for five minutes before transferring to a wire rack helps them set without losing moisture.

For a more vivid green color suitable for St. Patrick's Day, a few drops of green food coloring can be added to the dough.

  • 1 box white cake mix 15.25 ounces
  • 1 box instant pistachio pudding mix 3.4 ounces
  • 2 egg large
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract pure
  • cup confectioners' sugar

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper, set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, combine cake mix, pudding mix, eggs, oil, and vanilla extract until well blended. Place confectioners’ sugar into a medium bowl.
  3. Using a medium cookie scoop (1 ½ tablespoons), drop balls of dough (dough will be sticky) into the confectioners’ sugar, roll to coat. Gently form dough into a ball by lightly rolling between your palms.
  4. Place dough balls on prepared baking pan about two inches apart.
  5. Bake in preheated oven for 7 to 9 minutes. The bottoms will be set but middles will look slightly undercooked. Allow cookies to cool for 5 minutes on pan before removing to a wire rack.

Notes

  • Add 1–2 drops of green food coloring to the dough for a stronger green appearance if desired.
